Warmer times calls for salad – these are some delicious and healthy options. But don’t fall into the old trap and believe that iceberg lettuce, cucumber and chicken is the way to do it if you want to eat healthy. Add leafy greens, don’t be afraid of mixing oven-baked veggies with veggies such as tomatoes and celery. Add in a protein source, but think outside the box, salmon, chicken are great, but you could also add in hummus, egg, peas, tempeh, quinoa or lentils for a protein boost. Or sprinkle some chia seeds or other seeds of you choice to make it more proteinrich and hence more filling.

Veggie Lovers Avocado & Zucchini Plate

You need: A base of leafy greens of your choice. Zucchini noodles (easily with a spiralizer or you don’t have one, you can use your potatoe peeler). 3 small tomatoes, one grated carrrot, one egg and a half avocado, plus a teaspoon of sesame seeds. Perfect veggie head salad, which cotains a huge amount of nutrients and healthy fats, complex cabrs and proteins.

 

Salmon salad:

A base of leafy greens; ruccola and spinach, buckwheat and oven baked parsley flavoured salmon. This will give you a good amount of healthy fats, omega 3, amino acids and vitamin D, along with other powerful nutrients.

Beetroot, Goat Cheese & Hummus Salad

A base of leafy greens; Spinach, sprouts (Alfalfa), sliced, boiled beetroots, 40 gram of goat cheese and 1 tbsp. pumkin seeds. Perfect option on a warmer day and when time for a fresh, tasty and healthy lunch!
