Healthy Chocolate & Coconut Candy

70 gram dark chocolate
1/2 cup coconut flakes
1 pinch sea salt

1. Melt the chocolate.
2. When melted add in coconut and salt.
3. Spoon an equal amount of the mixture into silicon bake ware/ truffle/ mini muffin pan.
4. Place in your freezer for 30  inutes and remove your delicious chocolate and coconut candy. 🙂


Healthy Swedish Lussebullar

1 cup milk
25 grams yeast
70 g butter
150 g kefir
50 g saffron
3 tbsp brown sugar
3 tbsp honey
1 tsp salt
2 cups rice flour
2/3 cup almond flour

1. Melt the butter and add in the milk
2. Set aside and let cool until it reaches 37 degrees.
3. Add yeast, stir until well comined and the yest is a part of the liquid.
4. In a bowl combine kefir, saffron, brown sugar, honey and salt.
5. Add this miture into the butter and milk mixture.
6. Stir and slowly add in the flour.
7. Set aside your dough with a towel over it for about 1 hour.
8. After one hour it is time to make the buns. Place a baking dish with some parnishment paper on it and start making buns similar like the ones on the picture. When done, let them ferment for additionally 30 minutes.
9. Whisk together an egg and a little bit of water. Use this mixture to swab your buns and give them a more golden shine touch. Add two raisins to each one of thwm, just like in the picture.
11. Bake for 10-15 minutes on 225 degrees. Enjoy!!

Coconut & Lemon Bliss Balls

Healthy, yummy and no sugar added. Just natural ingredients to satisfy your craving as them at the same time will give you some powerful nourihment. Enjoy!

1 cup shredded coconut
1 cup almond flour
5 tbsp gluten-free oat flour
2 scoops Collagene powder
1/2 cup coconut milk (full fat)
1 squeezed lemon
2 tbsp honey

1/2 cup shredded coconut

1.Combine dry ingredients in a bowl.
2. Add coconut milk, lemon juice and honey.
3. Form balls (between 6-8) depending on size.
4. Place in your fridge for 15 minutes.
5. Time for topping! Cover your balls in shredded coconut.

Serve directly with some tea or coffee. Enjoy!

Surprisingly Healthy & Moist Brownie

As the little chocolate monster as I am or at least used to be, I am always experamenting with healthy chocolate desserts. I want to find a good texture, preferable moist, a good sweet and choco taste – and this time I did it. After making these a couple of days ago and having people asking me about the recipe, I thought I would make it again to get the right measurements and here we are…

1 cup chickpeas
1 banana
3/4 cup oats
4 tbsp cacao
2 tsp baking powder
3 tbsp almonds (optional)
1/2 coconutmilk
1 tbp coconut oil (optional)
1 tsp lemon juice
2 tbsp honey or stevia

Combine all the ingredients in a food processor or blender. Blend until smooth!
Pour the batter into a baking dish. Bake for15 minutes on 190 degrees Celcius.

Serve with a coconut whip: blended coconut milk, honey, raspberries and avocado. Top it with raspberries. Enjoy!!

Chocloate & Banana Cookies

Craving something sweet and tasty, but don’t want to go for the nasty white sugar cookies? This is a perfect alternative then. It’s a nice mix of fiber, antioxidants, vitamines and minarals, so you you can have one or two without guilt! 😉

2 cups gluten-free oats
1/2 cup rice flour
1 banana
50 gram chocolate (I used one with70 % cacao and Stevia)
3 tbsp cacao
1 tsp baking soda
1 tbsp raw honey
1/4 cup coconut milk
1 tsp cardamom
A pinch of salt

1/2 banana

1. In a bowl comine oats, flour and banana.
2. Chop chocolate roughly.
3. Add in chololate and the remaning ingredients.
4. Form small cookies and place on a baking dish with some parchment paper.
5. Slice the half banana and then half your slices.
6. Add one half on the top of each cookie.
7. Back in the oven for 15 minutes on 175 degrees Celcus.

Chewy Peanutbutter Brownies


First layer:
1 1/2 dl coconut flakes (fine)
6 dates
3/4 dl peanut butter (unslated and unsweetened)
A pinch of salt

Top layer:

1/2 dl coconut oil
2 tbsp cacao
1 tsp honey
1/2 dl almond milk
Sea salt

1. Soak dates for 15 minutes.
2. Blend dates with some water until a nice mixture, smooth mixture.
3. In a pot, place: coconut flakes, soaked dates, peaunut butter ad salt.
4. Stir while combining and letting everything melt together.
5. Pur into a container with some foil and place in the freezer for 15  minutes.
6. Meanwhile, melt coconut oil.
7. When melted add in cacao, honey and almond milk.
8. Stir until well combined.
9. Take out the first layer from the freezer and pour over the chocolate mixture, until you have an even top layer.
10. Place in the fridge for an additional half an hour.
11. Remove and cut into squares, enjoy this amazing deliciousness with friends, tea or coffee. <3

Chocolate & Lemon Eggs

Easter is a time when we tend to eat a lot of candy, hence a lot of sugar. But easter doesn’t have to mean sugar overload and unhealthy habits. Try this recipe which includes natural wholefoods instead.

5 dates
5 strawberries
1 tsp lemon juice
1/4 dl oatmilk
1 1/2 dl coconut flakes
1/2 dl oat flour
A pinch od sea salt
60 gram unsweetend dark chocolate (preferably with stevia
1/2 dl lemon zest

1. Place the dates in some water for at least 15 minutes.
2. Remove the pit
3. Place dates, strawberries, lemon juice and oatmilk in a blender or food processor.
4. Blend until it becomes a thick and smooth mixture.
5. Pour the mixture into a bowl and add in coconut flakes (fine), oat flour and sea salt. Stir!
6. Melt the chocolate over boiling water.
7. Add in the melted chocolate and place the well mixed mixture in the fridge for 30 minutes.
8. In the meantime grate the lemon zest, you will need 1-2 lemons.
9. Take out your mixture and it is time to form eggs.
10. Roll your eggs in the lemon zest. Ready to serve. 🙂

Naturally Sweetened Chocolate Bites

1 ½  banana
3 tbsp coconut oil
3 tbsp unsweetened cacao
1 tbsp honey or agave syrup (optional)
1 dl unsalted cashew nuts (or any other nuts of your choice)

1. Place banana in a food processor or blender.
2. Melt coconut oil and add in.
3. Add the remaining ingredients and blend until it’s a smoothie mixture with some bigger pieces of nuts.
4. Pour your mixture into a dish and sprinkle some coconut flakes.
5. Put it in the freezer for 2 hours.
6. Remove, and cut into pieces.


Froozen Smoothie Strawberry Hearts

1 ½  banana
3 tbsp coconut oil
5-6 strawerries
1 tsp lemon juice
1 tbsp honey or agave syrup (optional)
1 dl unsalted cashew nuts (or any other nuts of your choice)

1. Place banana in a food processor or blender.
2. Chop strawberries and add in to blender.
3. Melt coconut oil and add in that as well.
4. Add the remaining ingredients and blend until it’s a smoothie mixture with some bigger pieces of nuts.
5. Pour your mixture into a dish.
6. Put it in the freezer for 2 hours.
7. Remove, and cut into pieces, or use a heart shaped form to get your hearts. <3


Super-Easy Chocolate Covered Strawberries

200 g strawberries
100 g dark chocolateMethod:
1. Bring water in a pot to a boil
2. Put a plate on top of the pot.
3. Break your dark chocolate into pieces
4. Melt the chocolate in a respective water bath. Dip the strawberries halfway into the chocolate and let them dry. Serve! 🙂

Valentines Chocolate & Coconut Bites (Gluten-free)

Valentines day – a day to celebrate LOVE a little extra. No matter if we are talking about love to your partner, love to your mom or yourself. So lets celebrate this day with a sweet treat. Give you loved ones some extra love and bake these Valentines Chocolate & Coconut Bites. <3

100 gram butter
2 eggs
1/3 cup (1 dl) brown sugar
1 tsp baking powder
2/3 cup (2 dl) rice flour
1/4 cup 2/3 dl) cacao
1/6 cup (1/2 dl) almond milk
A pinch of salt

Second layer:
3 tbsp butter
2/3 cup (2 dl) grinded coconut
3 tbsp agave syrup
3 tbsp cream

1. Melt butter.
2. In a bowl whisk together sugar and eggs until fluffy.
3. Add butter and stir together with the rest of the ingredients for the first layer.
4. Pour your chocolate mixture into a safe baking dish. Place in the oven for 15 minutes on 200 degrees Celsius.

5. Meanwhile the chocolate layer is in the oven, pepare the second layer. Melt the butter.
6. In a bowl combine coconut, agave syrup and cream add the butter when melted. Stir until everything is well mixed.
7. Take out the chocolate layer from the oven.
8. Spread the coconut mixture over the chocolate layer and bake in additionally 10 more miutes.
9. Take out your cake and use heart shaped figurs to form your hearts.

Banana bread, who doens’t like banana bread (a part from my dear friend Anna)? Not many people. This Healthy Banana Bread, is a moist and yummy version, ready 20 minutes.

3/4 cup (2 1/2 dl) oat flour
1 tsp baking soda
1/3 cup (1 dl) Greek yogurt
1 egg
2 bananas (ripe)
2 tbsp agave syrup
1 tsp cinnamon
A pinch of salt

1. In a bowl, combine oat flour, baking soda and Greek yogurt.
2. Add the egg and stir, until well comined.
3. Add the bananas and mash with a fork until you have a banana mash.
4. Combine well and add the remaining ingredients.
5. Bake in a safe oven dish for 25 minutes on 200 degrees Celsius.

Enjoy mindfully together with some friends over a tea or coffee.
